Boiling tenderizes tough meats by dissolving connective tissues and burst starch grains to achieve optimal consistency in cereals and vegetables.

Although often regarded as a method for proteins like eggs or seafood, boiling's versatility is underappreciated. Lobsters, an iconic example, are traditionally boiled to highlight their delicate flavors.

Boiling isn't always the final step in cooking; many recipes incorporate multiple techniques. For instance, parboiling vegetables before roasting can shorten overall cooking time while enhancing flavor.

Smoke flavor

Smoking is a method of cooking meat and other foods over a fire. Wood chips are added to the fire to give a smoky flavor to the food. Smoke flavorings are produced by a wood-burning process called “pyrolysis”. The volatile organic compounds in wood break down and turn into smoke when burned – creating that unmistakable flavor that cannot be replicated in an oven.

As an alternative to traditional smoking, producers add them to a range of different foods to give a “smoked” flavor. The most important components of wood smoke are an oil known as syringol and a substance known as guaiacol. Both syringol and guaiacol are produced when a plant polymer presents in wood, called lignin, is burned.
Smoke flavor is a yellowish to reddish water-soluble liquid to add flavoring to any kind of food whether it’s meat, fish, or vegetables. Among the most popular flavors that it offers are applewood, mesquite, and hickory.

Prior to the late 19th century, the only way to get a smoky flavor in food was to cook it over a fire. In 1895, Ernest H. Wright (of Wright's Liquid Smoke) invented liquid smoke. He noticed a black liquid dripping from the stovepipe that heated the print shop he worked in.

He then experimented with wood combustion and found that by condensing the hot smoke from a fire, a smoke-flavored liquid would form.

Smoke flavor can be added to foods which are not traditionally smoked (such as soups, sauces or confectionery). Marinades and sauces are a natural fit. Try mixing it in salad dressings, chicken salads, brushed onto chicken before being breaded and fried.

Marinades are usually prepared with one or more acidic foods used to soften the food and allowing the flavors to be more easily absorbed. They are usually thin liquids; however, most utilize oil as a carrier of the flavorings into the food.

Marinating food adds flavor and does not have to add fat. Always marinate food in glass or ceramic dish in the refrigerator. Never place the food in a metal container.

Marinades may be used for as short a time as 30 minutes and as long as 2 to 3 days depending on the type of food and the recipe.

Fish should rarely be marinated for more than 30 to 45 minutes, especially if the marinade contains an acid component, such as wine, citrus juice or vinegar. Marinate too long will cause the fibers of the meat to break own, producing an unappealing, mushy texture.

The process of curing and smoking food has been employed to aid meat, fish, and poultry in conjunction with salting and drying and to develop flavor.

Preservation techniques have advanced significantly, but smoking is used to preserve, impart flavor and add texture to different foods. Wood smoke helps dehydrate and sterilized foods.

Initially, the smoking process was carried out in a kiln with little or no control over the smoking process.

The main components responsible for the smoke flavor are phenol derivatives. In additions to the flavoring compounds arising from wood pyrolysis, flavoring compounds derived from plants are also present.

Foods absorb the compounds, lose moisture, and develop characteristics ‘smoke’ flavors.

The soluble fraction mostly contains fatty acids and fatty esters, in addition to acids, alcohols, carbonyls, esters, furans, lactones, and many miscellaneous compounds.

An important step in the smoking process involves brine – mixture of sugar, salt and spices – to cure meats, poultry and seafood before they are smoked.

The flavor and color of the smoked product depend considerably on whether the wood used is hard or soft, wet or dried. Hardwoods are used predominantly; softwoods are added to enhance color.

Covered grilling

Most outdoor grills fall into one of two categories: open and covered. With covered grills, the grill lid traps the smoke, which infuses the food with outdoorsy flavor, while at the same time smothering flare-up.

Covered cooking is almost foolproof, one of the reasons that many grill manufacturers and other authorities recommend the method. It creates an oven effect and does much of the cooking with heat reflecting off the lid. In effect, grilling and baking are done at the same time.

The resulting flavor reflects the method, providing a modicum of grilled texture along with a generic baked taste.

Most covered charcoal grills have vents, or dampers, on both the top of the lid and the bottom of the grill, making it easy to control the heat.

If the fire is burning too slowly, open the bottom vent to add a little oxygen to feed the fire. If the food is cooking too quickly, open a top vent to allow some heat to escape.

Braising method of cooking

Braising is a combination of stewing and pot roasting that takes place in an oven proof dish in liquid and combined conduction and convection. Moist heat is responsible for most of the cooking process and the browning may be thought of as preliminary technique.

The method is very simple. Food is simmered in minimal liquid in a closed pot until the essence in every ingredient flavors very other ingredient.

The purpose of braising is to make food safe, to add verity to the menu and to enhance flavor, texture and eating quality.

Braised meats are usually browned first using a dry heat method such as pan-frying. This gives desirable appearance and favor to the product and sauce.

Long braising is the more traditional approach: the indisputable best technique for cooking breast of veal or lamb shank is long braising for anywhere from 1.5 to 4 hours until falling tender.

Short braising takes less than an hour and is reserved for more tender foods like cut-up chicken, seafood and vegetables. The role of short braising is not to tenderize tough cuts of meat but to bring out a depth of flavor not attainable through any other technique.

Cooking method: roasting chicken

Roasting chicken concentrates its flavor and makes crisp skin. When the chicken roast, the skin gets crisp, and the fat melts and seasons and flavors the bird.

Simply arrange the chicken breast side up on a rimmed baking sheet or in a shallow roasting pan, (deep pan interfere with browning) and roast it until the thigh releases clear juices when pricked with a fork.

A roasting pan with an uncoated surface works best, but a nonstick pan will also work. For perfect roasting, the chicken should be surrounded by the full heat of the oven not shielded by the sides of the pan.

Recipes for roasting chicken can call for oven temperatures ranging from 165 to 235 ° C. The chicken is done with the temperature in the thigh registers 80 ° C.

Using high heat for roasting chicken makes the skin brown and crisp and contributes to a flavorful sauce.

The dripping remaining in the bottom of the pan are perfect for making flavorful gravy. The dripping in the pan used to make gravy should be dark brown. If not, the final gravy will lack the color and flavor that comes with deep caramelization.
